Vegan Nam Khao

Vegan Nam khao is a popular salad from Laos, the crispy rice with the fresh herbs, the crunchy nuts and the tangy dressing tastes incredible!

Required Ingredients :

  • 1/2 Cups cooked rice (I used sticky rice and you might have to add a little flour if using another kind of rice)
  • 2 Tbsp Thai red curry paste
  • 2 cloves of garlic
  • 1 shallot
  • 3 lime leaves (optional)
  • 3 Tsp sugar
  • 3 Tsp light soy sauce
  • Combine everything and shape into little balls
  • Shallow fry in Nutri Zero Cholesterol Soyabean Oil

Dressing:

  • 2 Tbsp light soy sauce
  • 1 Chili
  • 2 cloves garlic
  • Juice of 1/2 lime
  • 2 Tbsp sugar
  • 1/4 cup (60ml) water
  • Mix

Else: 

  • A bunch of fresh mint and parsley/cilantro
  • Toasted coconut flakes and peanuts
  • Fried shallots
  • Assemble everything in a bowl and combine with the dressing

Serve in lettuce wraps
