Thus, oils rich in monounsaturated fatty acids can decrease risk factors for heart disease by improving one of them: &#8220;bad&#8221; cholesterol levels (or LDL) are lowered while &#8220;good&#8221; (or HDL) cholesterol levels are raised. Quantity fits into this definition of food.
