Celebrate Ram Navami with a Balanced meals

As we celebrate the auspicious occasion of Ram Navami, marking the birth of Lord Rama, many of us will be completing a week of Navratri fasting. Fasting, a profound discipline for both body and spirit, is traditionally broken with much enthusiasm—and often, with rich foods. However, this Ram Navami, I encourage you to break your fast with not just delicious but also balanced and nutritious meals.

During fasting, our body adjusts to a state of conservation; hence, reintroducing foods should be gentle and health-focused. Overly rich or heavy meals can shock the system and undo the benefits of fasting. 

Start with small portions of nutrient-dense foods that are gentle on the stomach. Coconut water and smoothies are excellent for rehydration, while fruits, soft-cooked vegetables, and yogurt can replenish your system without overwhelming it. These foods are not only easy to digest but also provide the essential vitamins and minerals needed to regain your energy levels.

It’s a delightful fusion that incorporates the robust flavors of Indian cuisine with the playful format of tacos, making your meal both exciting and healthful.

Ingredients
You don’t need much to get these vegetarian tacos on the dinner table. Here’s your shopping list:

  • Mexican Refried Beans – Refried beans are an ubiquitous dish in Mexican cuisine. While I made mine with kidney beans, you can also make them with pinto beans (which is the most traditional) or black beans. The recipe is quite simple — cook the beans till tender, then mash them with sautéed aromatics and spices. If you’re short on time, you may be able to find pre-made refried beans in the canned aisle.
  • Tomato Salsa – Bright and lightly spicy tomato salsa adds lovely freshness to these crunchy, bean-filled shells. Feel free to swap in Guacamole, Mango Salsa, or your own favorite combination!
  • Sour cream – If you do not have sour cream, use fresh curd or yogurt instead.
  • Taco shells or tortillas – These can be purchased from stores or made at home. You can also swap in your favorite thin flatbread like Roti or Paratha.
  • Grated cheese – I suggest using either cheddar cheese, processed cheese, or your favorite melting cheese. You can also omit it if you prefer.

How To Make Vegetarian Taco Recipe

Prepare the Kidney Beans:

  • Rinse 1 cup of kidney beans under running water. Soak them in enough water to cover them overnight or for 8–9 hours.

  • Drain the water, rinse the beans well, and add them to a 2-liter stovetop pressure cooker with ¼ teaspoon salt.

  • Pour in 2 cups of cool water.

  • Pressure cook on medium heat for 15–18 minutes until the beans are tender. (Fresh beans cook faster than older ones.)

  • Once the pressure naturally releases, open the lid. The beans should be fully cooked and mash easily. Drain any excess water and set aside.

Make the Refried Beans:

  • Heat 1 tablespoon olive oil in a pan over low heat.
  • Add the cooked kidney beans to the pan.
  • Pour in ½ to ⅔ cup water or vegetable stock to achieve your desired consistency.
  • Add salt to taste and mix well.
  • Let the mixture boil gently over low heat.
  • Mash the beans using a masher to your preferred texture (chunky or smooth).
  • Stir in black pepper, dried oregano, red chili powder, and cumin powder.
  • Mix thoroughly and simmer on low heat for 5–6 minutes until the mixture thickens.
  • Turn off the heat and set aside.

Assemble the Tacos:

  • Preheat the oven to 100°C (210°F). Warm the taco shells on a baking tray for 2–3 minutes (optional for crispy shells).

  • If using soft taco shells, you can warm them in a pan on the stovetop instead.

  • Arrange the taco shells on a plate.

  • Spoon the refried beans into each shell, spreading them evenly.

  • Add a layer of tomato salsa on top of the beans.

  • Add 1–2 spoons of sour cream or yogurt.

  • Sprinkle grated cheddar cheese over the top.

  • Garnish with coriander leaves, parsley, or avocado slices if desired.

Serve the tacos immediately while the shells are warm and crispy. Enjoy your fresh, flavorful vegetarian tacos! 🌮
